How to make this rich, flavorful beef stew?
Ingredients
For the Beef Stew:
• 2 ½ lb hind shank bone-in beef, cut into chunks
• ¼ oz black pepper
• ½ oz garlic powder
• ¾ oz salt
• ½ oz all-purpose seasoning
• 4 oz tomato ketchup
• ½ oz margarine
• 1 tsp jerk sauce
• 3 sprigs fresh thyme
• 3 cloves garlic, minced
• 4 oz celery, chopped
• 14 oz Irish potatoes, peeled and diced
• 8 oz carrots, sliced
• 8 oz fresh tomatoes, chopped
• 6 oz bell peppers, diced
• 10 oz yellow onions, chopped
• 4 ½ cups water
For Serving:
• 1 cup cooked white rice
• Broccoli, Beetroot & Mango Salad
• ½ cup steamed broccoli florets
• ½ cup diced mango
• ½ cup boiled and sliced beetroot
• Drizzle of Chef Shrimpy's Mango Vinaigrette
Instructions
In a large pot, season the beef with black pepper, garlic powder, salt, and Chef Shrimpy's all-purpose seasoning.
Cover and cook over high heat for 15 minutes, stirring occasionally.
Add 1½ cups of water, stir, and cover the pot. Continue cooking for another 15 minutes.
Stir, then add 1 cup of water and cook for an additional 4 minutes.
Add all the chopped vegetables and 2 cups of water.
Stir well, cover, and cook for 13 minutes over high heat.
Final Simmer & Seasoning:
Stir again, reduce the heat to medium, and continue cooking for 30 minutes.
Add margarine, Chef Shrimpy's jerk sauce, ketchup. Crush half of the potatoes to thicken the gravy, then simmer for another 20 minutes until the beef is tender.
Presentation
• Serve the rich, flavorful beef stew in a deep bowl.
